Celeriac and Pear Soup

Day 3 of the 30 recipes... I was looking for something to do with celeriac and pears and found this simple recipe.

Celeriac and Pear Soup
olive oil
4 shallots , finely sliced
2 garlic cloves, finely chopped
thumb-sized piece ginger , finely chopped
1 celeriac, peeled and roughly chopped
4 ripe pears, peeled, cored and roughly chopped
4 cups vegetable stock
salt and pepper
handful flat-leaf parsley , chopped

Heat 1 tbsp oil in a large saucepan, add the shallots, garlic and ginger and cook over a medium heat for about 5 minutes until softened but not colored.


Add the celeriac, pears and stock, bring to the boil, then reduce to a simmer and simmer for 20-30 minutes or until the celeriac has softened enough to mash easily.



Blend until silky smooth.

Blend until smooth, add more stock if need be.
Pass the soup through a mesh sieve to make sure you get any big pieces.


Season with salt and pepper and serve sprinkled with parsley.
