Celeriac

I have way too many cookbooks that I never use. Last night I was looking for something to do with what we had, and came across this simple dish from Happy Days with the Naked Chef

Smashed Celeriac
1 celeriac, peeled and diced
olive oil
thyme
2 cloves garlic, diced
salt and pepper
1/4 cup water or stock

Heat oil in a pan over high heat. Add everything else expect the liquid and cook, browning the celeriac for about 5 minutes.


Once it has picked up a nice golden, add the stock and cover the pot, lowering the temp to medium. Cook until the celeriac is soft.


Using a fork or potato masher, crush some of the celeriac.
