We first came across this dish when we were on our honeymoon in San Gimignano. Its a simple bread topped with white beans.
Fettunta al Fagioli
4 thick slices bread
3 - 4 cloves garlic, set aside one, slice the rest
1 can white beans, drained, reserve liquid
salt and pepper
EVOO
Saute the sliced garlic with salt and pepper over medium heat until soft, about 5 minutes. If desired add pepper flakes to taste.
Add the beans, cooking until warm. slightly mash some of the bean. Add some of the liquid if the mixture becomes too dry. This can sit on low while you prepare the bread.
Toast the bread, or better grill until slightly charred. Then rub one side with the reserved garlic clove.
Place some of the beans on each slice, finish with EVOO (preferably Italian) and coarse sea salt and fresh pepper.
