Salmon Sandwiches

Rather than just eat salmon plain, we love to make sandwiches. You can vary to toppings to taste, but its a fun way to eat the salmon.

I served it with BBQ sauce, balsamic onions, oven roasted tomatoes, avocado, and arugula. With some home-made potato chips on the side.

To prepare the onions, slice and cook over low to medium heat with a little oil. After they have softened and have begun to caramelize, splash with a touch of balsamic.


To prepare the salmon, remove the skin and season with salt and pepper. Lightly coat with olive oil. Cook on one side in a hot oven proof pan for a minute or two until nicely browned.


Flip over and coat with BBQ sauce and place in a 400 deg oven for about 10 minutes or until cooked through depending on the thickness of the piece.



Meanwhile, slice the bread top with the onions, tomatoes, avocado and arugula. Place the fish on the bread, top with some more BBQ sauce.



Serve with some of the chips.
