Extra cilanto...or basil...

I recently ended up with a lot of cilantro, way more then I would consume before it would go bad.

So in order to save it, I pureed it with a touch of oil. This will then keep in the refrigerator for much longer. You can also pour this into ice cube trays and freeze. Then once frozen, store in plastic bags. These cubes can then be added to soups or sauces to add a cilantro kick.

This can also be done with basil, keep in a squeeze bottle and use to top caprese salad or pizza.
