The addition of the EVOO was nice, though I still think it needs a little more salt.
I typically make 3 or 4 at a time gives a nice variety and with 2 pizza stones does take that long to cook.
Last night we had:
White with hot peppers and Red:
Truffle with arugala and over roasted tomatoes and basil
As a salad we had Burrata with arugula and roasted tomatoes. Burrata is a fresh mozzeralla with a creamy inside, almost like cottage cheese. It sounds gross, but it is yummy.
For the salad:
Cut Burrata in to quarters
Add roasted tomatoes (EVOO, salt and pepper, garlic :: 400 Deg for about 30 -40 min)
Season generously with salt and pepper
Drizzle with EVOO
Drizzle with reduced Balsamic (balsamic, pan :: cook slowly)
Toss arugula with salt, pepper, EVOO and Balsamic
Top cheese with dressed Arugula
